Each of the Top Chef Portland final three have shown that they can cook mouthwatering, tasty dishes. In the process, they've also shown that they deserve the chance to be Top Chef winnersLuckily for Top Chef fans, Dawn, Shota, and Gabe have successful restaurants. These chefs are planning to open new eateries in the future.

As of June 2021, Shota owns and operates a restaurant in Seattle called Taku. Its current menu focuses on Karaage, which is Japanese fried chicken. Some things you can find on Taku’s menu are Karaage nuggets, Karaage rice bowls, Karaage burgers, and furikake fries. The restaurant launched in 2020 but had to temporarily shut down due to the coronavirus. However, the future definitely looks bright for this exciting eatery, which is getting plenty of buzz. The restaurant reopened in May 2021 and changed its menu focus.

In August 2021, Shota, alongside food writer Sabrina Medora, will be hosting a charity event. This event will reunite Shota with his Top Chef season 18 competitors and friends Jamie Tran, Maria Mazon, and Byron Gomez. The event will be a pop-up restaurant based on their "restaurant wars" episode concept, Kokoson. This concept combined Asian and Latin American-inspired dishes. The event is being hosted at Animae in San Diego and tickets are already sold out.

In August 2021, Dawn will open the doors to her restaurant, Last August. It’s a business venture that she shares with Lucille’s Hospitality Group chef and owner Chris Williams and chef Khang Hoang. It’s an Afro-Asian concept restaurant that will be situated in Houston. The restaurant pays homage to the department store era. The name of the restaurant comes from those old school Sears catalogs that used to be released in late August.

The concept of the restaurant is a whimsical nod to Sears’ heydey and will be located at The Ion in Houston's midtown area. This is the location of the old Sears building. Dawn also hosts monthly pop-up events throughout Houston. The idea of test kitchen pop-ups originated from her meal prep service, PIVOT. You can check the Chef Dawn Burrell website for details on when she’ll do her next pop-up event.

In the fall of 2022, Gabe will launch his restaurant Bacalar in Austin, Texas. Gabe invites fans to follow the restaurant’s official Instagram page for updates on this venture. Bacalar will be located in the Rainey Street District of Austin. It will focus on Gabe’s heritage and Mexican cuisine. Bacalar will specifically focus on the Eastern regions of Mexico and his family’s homeland of Yucatan.

The restaurant will have dishes inspired by Yucatan and his memories of the place. Many of the dishes are culinary odes to Mexican corn,  chiles, and an array of distinct Yucatan flavors. Gabe fans will have to wait a little while for his restaurant launch. However, we are sure that the wait will be worth it.
